Wang-galbi fried chicken in Extreme Job
What happens
An undercover narcotics squad's fried-chicken front becomes an accidental sensation when one detective glazes the birds with his family's Suwon galbi marinade. The joke escaped the screen: real chicken shops — including on Suwon's decades-old Chicken Street — added galbi-marinade fried chicken to their menus for the film's fans.
The food: Wang-galbi fried chicken (왕갈비통닭)
Wang-galbi tongdak is whole fried chicken finished in a sweet-savory beef-rib (galbi) marinade — soy, garlic, sugar and sesame over crisp skin. It was fictional; now it isn't.
Make it at home
- Make a galbi glaze: 4 tablespoons soy sauce, 2 of sugar, 1 of honey, minced garlic, sesame oil and black pepper, simmered 2 minutes.
- Fry (or buy) plain crispy Korean fried chicken.
- Toss the hot chicken through the warm glaze just before serving — don't soak, or the crust dies.
- Finish with sesame seeds and sliced scallion. Beer is not optional.
Where to try it
Suwon's Tongdak Alley near Paldalmun Gate is the pilgrimage spot — several shops now serve galbi-marinade chicken alongside the classic tongdak.
