What is Yangnyeom Gejang?
Yangnyeom-gejang is raw crab's louder mode: chunks cured not in soy but in a dense, sweet-hot chili paste, clinging to every crevice of shell. Less subtle than ganjang-gejang and prouder of it — this is the version that turns a bowl of rice into two.
How to eat it
- Same hands-on technique as soy gejang — suck, scrape, mix the paste into rice.
- Lettuce wraps with the chili crab meat are a southern-style variation.
