What is Bibim Naengmyeon?
Bibim-naengmyeon swaps the icy broth for a sweet-spicy gochujang sauce clinging to the same chewy buckwheat noodles — cold, fiery and addictive. It's the louder sibling of mul-naengmyeon, and every Korean has a firm allegiance to one or the other (or orders both broths on the side and refuses to choose).
How to eat it
- Mix thoroughly before the ice melts and dilutes the sauce.
- Ask for yuksu (broth) on the side — sipping warm or cold broth between spicy bites is standard.
- Cut noodles with scissors first if you don't want a workout.
Good to know
- The sauce is deceptively spicy and builds — sweetness masks the heat for the first minute.
Hamhung-style (chewier sweet-potato starch noodles, often with raw skate) is the hardcore version — see Ojangdong's famous alley.
