Mul Naengmyeon (물냉면)

What is Mul Naengmyeon?

Mul-naengmyeon is buckwheat noodles in iced beef (or dongchimi) broth — a dish Koreans eat with near-religious seriousness, especially the austere Pyongyang style whose 'flavor you learn on the third try' is a national inside joke. Post-BBQ or mid-heatwave, nothing else resets the body like it.

How to eat it

  1. Taste the broth BEFORE adding anything — Pyongyang purists take it straight; mustard and vinegar are for adjusting, not automatic.
  2. Let staff cut the noodles with scissors if offered (buckwheat strands are long).
  3. Drink the broth from the bowl at the end — expected, not rude.

  • Pyongyang-style tastes 'bland' to first-timers by design — start with the sweeter mainstream style if unsure.
