Dakgalbi (닭갈비)

What is Dakgalbi?

Dakgalbi (닭갈비) is spicy stir-fried chicken from Chuncheon — chicken thighs, cabbage, sweet potato, perilla leaves, and tteok tossed in a gochujang sauce on a huge flat pan at the table. Despite the name ("chicken ribs") there are no ribs; it began as a cheap student dish and became a national one. The mandatory finale is bokkeumbap: fried rice scraped together in the same pan with the leftover sauce.

How to eat it

  1. Let the staff stir — dakgalbi cooks in stages on the big iron plate, and they manage the order (chicken → cabbage → tteok → perilla).
  2. Start eating only when they say it's ready; wrap in lettuce or perilla leaves with a slice of pickled radish.
  3. Save room: the fried-rice finish (bokkeumbap) in the leftover sauce is considered the best part — order it with cheese if in doubt.

Cooking it at home

  1. Marinate chicken thigh pieces in a gochujang-soy-curry base for 30+ minutes.
  2. Stir-fry with cabbage, sweet potato and tteok on high heat until the sauce thickens and clings.
  3. Finish with perilla leaves; fry leftover rice in the pan residue.

  • Spice builds as the sauce reduces; ask for 순한맛 (mild) if you're heat-shy.
