For everyone who came to Korea for the fire: this is the real heat list, not the tourist version. Everything here scores 3 or higher on our 5-point scale — dishes where the chili is structural, not decorative. Two local tips before you start: Koreans temper heat with rice, broth and cooling banchan rather than water, and 'less spicy' (deol maepge) is a legitimate order at most of these places. Ranked roughly from approachable to punishing.
