Galbi (갈비)

What is Galbi?

Galbi is beef short rib in a sweet soy-garlic marinade, grilled over charcoal — the celebration tier of Korean BBQ, reserved for family dinners and treating guests. The popular LA-style cut is sliced thin across the bone, so each strip carries three small bone medallions and cooks in minutes.

Unlike samgyeopsal, galbi arrives already seasoned, so locals eat it as-is — the marinade is the point. Mild, sweet and smoky, it's one of the safest orders for anyone who can't handle spice.
