What is Tteokgalbi?
Tteokgalbi (떡갈비) is grilled short-rib patties — beef (often mixed with pork) minced, seasoned sweet-savory, pressed back onto the bone or into rounds, and grilled with a soy glaze. Originally a royal dish designed so the king wouldn't gnaw bones, it is now a specialty of Damyang and Gwangju in the southwest. The texture is somewhere between a burger patty and galbi itself: springy, juicy, and slightly chewy from hand-mincing.
How to eat it
- Cut the patty into bite-size pieces — it's minced rib meat, so no bones to work around.
- Eat with rice and banchan, or wrap in lettuce like galbi.
- Try a piece with the sweet glaze first before adding any sauce — it's fully seasoned.
Cooking it at home
- Mix minced beef (traditionally rib meat) with soy, sugar, garlic, sesame oil and chopped scallion.
- Shape into thick patties and chill so they hold together.
- Pan-sear on medium, then finish on low with a soy-honey glaze.
