An entire wing of Korean cuisine — the milky beef soups, royal-lineage grills, clear broths and celebration noodles — contains no chili at all. You could eat brilliantly in Korea for a month without touching heat.

Why Korean food looks spicier than it is

Two reasons visitors overestimate the heat. First, red does not mean hot: gochugaru (Korean chili flakes) delivers deep color at moderate heat, so dishes like yangnyeom sauces and many stews look alarming and eat gently. Second, Korean "spicy" (maeun-mat) is a balance concept — heat woven through sweetness, fermentation and umami — not the pure burn of, say, a Thai bird's-eye chili. Genuinely punishing dishes exist (buldak, some jjamppong), but they are the exception, clearly labeled, and usually optional upgrades.

How to order mild — the phrase that works

"안 맵게 해주세요" (An maepge haejuseyo — "not spicy, please") works at kitchens that assemble to order: bunsik shops, chains with spice levels (순한맛 = mild), chicken places. Common follow-up questions

Is kimchi spicy? Mildly — most cabbage kimchi sits around 2/5; the sourness reads stronger than the heat. White kimchi (dongchimi) has zero chili.

Is Korean BBQ spicy? Almost never. Samgyeopsal is unseasoned pork; bulgogi and galbi are sweet soy marinades. The heat at a BBQ table is optional — it lives in the dips and kimchi.
